Principle | Microbes produce a wide variety of lipases and phospholipases that can be detected by the clearing of a lipid substrate in an agar plate ( eg egg yolk, olive oil, serum, lecithin) or by the appearance of fatty acids as the breakdown products. The fatty acids will cause pH changes around isolated colonies that can be visualized by several pH indicators. Some phospholipases such as those of Staphylococci and Clostridia are hemolytic and cause clearing of blood agar see also lecithovitellin |
